A low DE enzyme converted syrup with a low dextrose content that yields minimal sweetness, high viscosity and low hygroscopicity. These are developed to contribute body, mouthfeel and crystallization control. They also provide emulsions to foods and assist with water retention.
A medium DE enzyme converted syrup with a relatively low dextrose content yielding a moderate sweet taste and bland flavor. These are developed to contribute mild sweetness, body and viscosity.
